Vegan Casseroles by Julie Hasson. All but two recipes are gluten-free, have gluten-free adaptations or are easily made GF with tamari and GF pasta.

Vegan Pizza by Julie Hasson. There is a gluten-free crust recipe and almost all of the toppings are gluten-free. So lots of options.
