Zippy Cheese Sauce
Here’s my go-to cheesie sauce for fast mac n cheese! It’s super healthy, ‘cuz squash! I usually use the full 1/2 cup of water for this, and then heat it up to thicken. If you don’t want to heat it up, try starting with 1/3 cup of water, and adding more if necessary.

  1. Place everything into the the jar of a strong blender and blend until very smooth. Season to taste with additional salt, if desired.
  2. Pour over hot pasta and eat! Or, heat up and use for dipping chips, baked potatoes, roasted vegetables, or drizzling over bowls.
Recipe Notes

If you don’t have a strong blender, be sure to soak the cashews in advance and drain them. And, if you’re using frozen squash, let it defrost a bit before you attempt to blend everything together.
