Sometimes recipes are born from a dream, and other times it’s a push from your mom because she needs to bring a dessert to a party. Or is that just me? Well however the ideas come about, I pretty much live for creating new recipes (which is a good thing, since I’m a recipe developer). This cake was actually a combo of a big nudge from my mom (because she really did need a gluten-free and vegan gingerbread cake to take to a party), and also the gorgeous bowl of apples sitting on my counter from Stemilt Growers

My husband had been begging me to let him eat those beautiful apples, but I wouldn’t let him touch them. I was waiting to put them in the perfect recipe, and low and behold, once my mom started asking for the gingerbread cake recipe, I knew that they would be a fabulous addition to it.

To keep this recipe super easy, I started with a box of Julie’s Original White Cake Mix. I like to keep recipes uncomplicated, especially when it comes to gluten-free baking. Also, full disclosure, Julie’s Original is my company, so I literally always have the mixes in my pantry. I also wanted to keep things simple for my mom, so she doesn’t have to go out and tract down a bunch of gluten-free flours. 

And I wasn’t joking about my mom. She really did want a dark, rich flavored gingerbread recipe stat. So I immediately got to work. I knew the first call was adding some molasses, as well as ground ginger, allspice and nutmeg. I took it a step further too, by adding brewed coffee to up that lovely, rich flavor. If you don’t do coffee, I think that you could easily substitute brewed tea, either Earl Grey or Chai would be nice. Oh, and those apples make this gingerbread even better! Why haven’t I thought of adding apples to gingerbread before?

Anyhow, you are going to love this cake! It’s wonderful for snacking with tea or coffee, but it would also make a perfect Thanksgiving dessert, as it makes a 9 x 13-inch cake! This cake is filled with all of the wonderful spicy flavors of Fall. The apples totally make this cake, and you can add 2 to 3, depending on how much fruity, apple goodness you want.

Instructions
  1. Preheat oven to 350°F. Line and grease a 9 x 13-inch baking pan.
  2. In a large bowl, mix together the cake mix, ground ginger, cocoa powder, cinnamon, allspice, and nutmeg. Add the milk, molasses, oil, coffee, and vanilla, and beat until smooth. Stir in the apples and the candied ginger, if using.
  3. Spread the batter in the prepared pan, and bake in the preheated oven for 50 to 60 minutes, or until the cake is cooked all the way through, and a tester inserted into the middle comes out clean. Frost if desired or dust with powdered sugar before serving.
