You can finally feel Fall in the air here in Portland, with the crisp and cool temperatures. It immediately makes me want to run to the kitchen and bake. Which is a good thing, since I needed to create a Fall dessert to share on TV this morning.
I knew that I wanted to make spiced apple crisp, and then thought that it could be interesting to give it a try in the Instant Pot (which is an awesome electric pressure cooker!). Baking desserts in the Instant Pot is new for me. I use it all of the time for soups and stews and curries and such, but completely forget to make desserts in it. Well not any longer! Now I will be using my Instant Pot on the regular for desserts too. This Apple Cider Crisp is incredibly delicious! The oatmeal topping bakes up a little softer in the pressure cooker, almost caramelizing thanks to the brown sugar. And the apples get super soft and sweet with the spiced apple cider. It’s so good, and may just be my new favorite dessert!
Don’t worry if you don’t have an Instant Pot, because you can also bake this in the oven too. The difference is 12 minutes in the pressure cooker versus 40 to 45 minutes in the oven. That actually makes it quick enough to make for breakfast!

Oh, and if you’re wondering which apple cider I used, it’s a spiced cider that Trader Joe’s sells every Fall. I always stock up on it because it’s so good! I’ve also seen other brands too. If you don’t have spiced cider, you can use regular apple cider and an extra dash of cinnamon and nutmeg if you have it.
