And, I’m in love with these waffles, they are sooOOOooo good. Great on their own, but if you’re gluten-free they are the PERFECT answer to your quest for garlic bread. I actually have lasagna in the fridge, and opted to eat two of these gorgeous things instead of any lasagna. Don’t be mad at me when you develop a strong addiction to these and stop eating all other food groups. Garlic butter cheese waffles forever on repeat sounds like a pretty AOK plan to me…

Any kind of vegan shreds will be yumps in this recipe, but your waffles will be their prettiest with a cheddar style. Pictured in these waffles, I used a white smoky-dill I had hanging out in the fridge, it was adapted from our Pepper Jack recipe.

AKA Garlic bread in cheese waffle form. How to eat? Schmear hot waffles with garlic butter and chow down.
These are pretty much the most delicious things you could ever consume.
They go great with spaghetti or lasagna, but if left to my own devices, I'd probably just eat all of these in one go.

Instructions

  1. Preheat the waffle iron. In a medium bowl, mix together flour, cornmeal, nutritional yeast, baking powder, salt, and a few grinds of black pepper.
  2. In a small bowl, combine the soymilk and vinegar and stir together. Add the water and oil. Add the milk mixture to the flour mixture, and stir until well mixed. Stir in the shredded cheese.
  3. Carefully grease the hot waffle iron with an oil spray, or use a pastry brush and lightly coat with oil. Scoop batter with a heaping 1/3 cup measure (or smaller, depending on your waffle iron), and place on iron. Close lid and cook until crispy and golden. Repeat with remaining batter. This recipe was tested on a Belgian waffle iron, and the waffles generally take 7-8 minutes to cook.

  1. Combine the melted vegan butter, minced garlic and parsley.
Recipe Notes

If you have issues with waffles sticking to your iron, you probably have some residue on it that needs to be cleaned, are not greasing the iron enough, or are pouring the batter on before the iron is adequately preheated.
