Cashews are pure magic, and I put them to the test regularly at our house. Here they’re blended with fresh celery to make my favorite ranch dressing. I use this interchangeably for salads, and as a creamy dip for Baked Cauliflower Bites.

This is a little spicy, if you prefer a dressing with less kick, omit the pickled jalapeños and add a little bit more lemon juice or rice vinegar, instead.

Instructions
  1. Put everything except the fresh herbs into the jar of a strong blender. Process until smooth. and pepper, as desired
  2. Add the water slowly, until you get the desired thickeness your prefer, you might not need all of it.
  3. Pulse in the herbs, or mince by hand and stir them in.
  4. Season to taste with salt.
Recipe Notes

If you don't have a high speed blender, soak the cashews in water and drain before using.
