The Big Gigantoid Crunchy Peanut Butter-Oatmeal Cookies in Isa Chandra’s first edition Vegan with a Vengeance have been a long favorite at our house. But, when I went gluten-free and had to give up refined sugar, I had to give up these cookies, too! 🙁
Recently, I’ve been playing around with the recipe to make them Kittee-Friendly, and I love this version! These are delicious, hearty cookies, that are perfect for snacking, or even breakfast. This version is slightly sweet, but not cloying in any way. I like the addition of chia jam, but obviously you can leave that out, if you just want plain peanut butter cookies. Or, instead of chia jam, you can use your favorite jam.
If adding jam, you can make these two ways. As thumbprint cookies, or as stuffed cookies. I like the stuffed version the best, as they’re less messy to eat on the run, and the jam filled center keeps the cookies moist. If you make your own chia jam, these cookies are perfect for using summer fruit!
