Although I talk about New Years in the video above, kittee and I thought that this fondue would be absolutely perfect for Valentine’s Day! It’s so good, and would really be delicious for any occasion, because hello, who doesn’t love a melty, gooey, cheesy fondue? But this would definitely be extra special for Valentine’s too (and is what I’ll be making my hubby for Valentine’s dinner, but shhh, don’t tell him).
There really aren’t many special ingredients here, other than the vegan lactic acid, which you can easily order on Amazon. The rest of the fondue is simply cashews (no need to soak unless you don’t have a high-powered blender), nooch, miso, white wine, tapioca starch and some seasonings. If you can’t eat oats, simply substitute an additional tablespoon of tapioca for the oat flour. I used GF oat flour from Bob’s Red Mill.
You also don’t need a fondue pot for this recipe, unless you have one kicking around the back of your cabinet. Alternately a small Crock Pot works really well too. I used a saucepan, which which worked great set on a trivet surrounded by cut veggies (such as steamed baby potatoes, steamed cauliflower and broccoli, snap peas, mini bell peppers, grape tomatoes, and cubes of bread!). In the photo I used a gluten-free baguette from a local bakery, but do you know what would be amazing? Big crispy delicious croutons made from a loaf of GF bread (such as the amazing bread recipes we have in our eBook)!
Oh, and don’t worry if you don’t have fondue dippers. I have used both forks, chopsticks and bamboo skewers, and they all work equal well.
